About Hiis Restoran

Hiis Restoran OÜ runs Hiis, a fine-dining restaurant on the coastline in Manniva, Harju county, Estonia. The menu is a 15-course seasonal experience built on local and foraged produce, and the dinner lasts up to four hours.

Guests are individual diners, couples and groups who book dinner seats; the menu is priced per person. The restaurant follows a sustainable approach that focuses on reducing waste and supporting domestic small businesses.

The company was founded in 2024. Head chef Daanius Aas received the Michelin Young Chef Award in 2023, and the restaurant is listed with a Michelin Green Star for 2026. The launch project was co-funded by EU Cohesion Policy funds for 2021–2027.
